Lazy Cooking Day

"The best way to predict your future is to create it. Make it happen!" (Denise Austin)

Hello, my lovely friends!

This morning I got up and already knew that I was going to have a lazy day. On the weekends I can get lazy when it comes to dinner, sometimes I cook and sometimes I don't. Today I choose to make something super easy in the slow-cooker. After looking through the freezer I decided to pull out a roast. Here's a super quickie recipe for what I did with the roast...

Roast Sandwiches

1 onion, sliced

8 button mushrooms, sliced

1 beef roast

salt & pepper (season both sides of the roast)

2 beef bouillon cubes

1 tsp. dried Italian seasoning

4 cups of water (enough water to go up a little more than half way up the roast)

whole wheat hoagie buns

sliced provolone cheese

Put the lid on the crock-pot, turn it on high and let it cook for up to six hours

Take the roast out and let it rest about five minutes and then shred it with two forks

You can make your sandwich any way you want to. Of course I only used the mushrooms and no onions.

So glad you could stop by! Wishing you a splendid rest of your day/evening/morning, wherever you may be.

Until next time! Adios...

  1. Oh that sounds delicious! You gave me the idea to make that recipe into BBQ pulled pork. Have some delicious Wahlberg S. Carolina BBQ sauce and that will make a good supper! Thank you! Have to take kaiser rolls out of the freezer, too. YUMMY!

Here's to an easy Sunday meal.

  2. It's Kathy. I am also using my slow cooker today but I'm making Spaghetti Sauce. I promised Tom I'd make up a batch before my surgery so we have more options in the freezer!

  3. You made my mouth water with that recipe. The weather has moderated here, and the cooler temperatures make a pulled meat sandwich sound divine!
