This is a cranberry sauce you make in the slow cooker. You can make it on the stove and it would take about 30 minutes to make, but you have to watch it and make sure it doesn't explode with the cranberries popping (I had that happen before). A few years ago I started making this in the slow cooker because it's just easier. It does take about four to five hours, but it smells so amazing and it's so worth it. Now I do love the canned cranberry sauce, but Thanksgiving is a special day and I want to have some special dishes.
Chunky Cranberry Sauce
(makes 8 to 10 cups)
What you Need
· 2 bags of cranberries (12 oz. each)
· 2 apples, peeled and cubed
· 1 orange (zest and juice it)
· 1 bag of dried cranberries
· 1 cups of Splenda
· 1/2 tsp. of cinnamon
· 1/4 cup of water
· Slow Cooker
Directions
· Get your slow cooker, spray it with a non-stick spray or use a liner and turn it on low.
· While the slow cooker is warming up, wash your cranberries, zest, and juice the orange.
· In the slow cooker put the cranberries (fresh and dried), Splenda, cinnamon, orange zest, orange juice, and water. Mix it all up and put the lid on it.
· This is going to cook on low almost five hours or high for about three hours. I do stir it about halfway through.
· The cranberries break down and pop. I take a masher and mash it, but I do like to keep it chunky.
Other Ways to use the Cranberry Sauce
· Left-over turkey sandwich with stuffing and cranberry sauce. I like to use a croissant, but also a grain bread will taste good.
· Use on English muffins, bagels or toast for breakfast
· Pork chop or chicken. I like having sweet and savory with meat sometimes. I would add some chili to it like a jalapeno or chipotle pepper to it.
· Salsa, I have so many tomatoes. I would make my regular salsa and add a cup of the cranberry sauce to it.
