Tacos and Leftovers

Hello, my lovely friends!  

 

      I’ve been feeling cheffy lately and cooking up a storm. On Tuesday I made taco with a roast in the slow cooker. I found an marinade for it and boy did the house smell good. I made homemade peach salsa too. Dinner was so good and we had leftovers and I made something even bigger than the day before. I made chile relleno and Mexican rice.

 




 

      It’s been a busy week for us with the anniversary of my dad’s death coming up, It usually brings up old memories and has me thinking more about him. It seems harder this year and I feel more emotionally about everything. My mom is struggling with it, but then again she always is. This week I’m watching movies that my dad loved we did Cat Ballou and the Godfather so far. I have a few more to watch before Sunday comes. As long as we have nice weather we’re going to the cemetery on Sunday to see him. 

 

      I’ve been calling Kaiser trying to get an earlier appointment for my second screening. I just want to get it done and know the results. I hate just waiting around until the end of the month. It’s stressing me out a little bit. I’m still trying to be positive about the whole thing.

    (((HUGS))) as you and your Mom struggle with the anniversary of your Dad’s passing. He’s looking down on you both and smiling. It's good that you and your Mom have each other to get through this.

    I don’t blame you! I would not want to wait so long either. Are you on the cancellation list? I always try to do that when a needed appointment is so far out.

  4. It's Kathy. Your food looks so yummy! Yes, I understand how frustrating it can be waiting for doctors! I've been trying to get a referral to a Neurosurgeon since Tuesday and no one will help! I feel like it's a result of all the pain I had before my back surgery! I hope you can get in earlier.
