Silly Me... I Had Days Mixed Up

"We all have life storms, and when we get the rough times and we recover from them, we should celebrate that we got through it. No matter how bad it may seem, there's always something beautiful that you can find." (Mattie Stepanek)

Hello, my lovely friends!

I am so sorry about no blog yesterday. Honestly I thought it was Wednesday and my day off, silly me. So let’s get to what yesterday’s blog should have been.

First off, my mom is home now. It was touch and go that day because we were getting snow from the night before. They kept talking about it being between 6 to 10 inches and wasn’t sure if she would be delayed or canceled. She was able to get home almost an hour earlier too. She had a wonderful time there, but was ready to come home. I saw pictures from the wedding and it looked like they all had a wonderful time. She’s been resting the past couple of days now.

While my mom was gone I was cooking up a storm making different things, especially pasta since she’s not a big fan of it. I was posting on my Twitter “X” account. So, I thought I post the pictures of all the different things I made for a week of dinners.

Ramen with shrimp, dumplings, and an egg roll

Chicken Pesto with melted mozzarella on sourdough bread

Steak salad with pickled cucumbers

Ramen with steak, dumplings and pickled cucumber

Cheese Ravioli with chicken in broth

Christmas Eve dinner Pasta with shrimp, mushrooms, and spinach with a garlic butter sauce

Lemon Pasta with Shrimp and Mushrooms

My mom's dinner when she got home Cheese Enchiladas

Thank you for stopping by! Wishing you a day/evening/morning filled with sunshine, laughter, and perhaps a little bit of magic. Until next time, ta-ta for now!

  3. It's Kathy. YUM!!! I sure wish my meals looked like that! Or even close. Everything looks so delicious! I've been wondering what I'll make for dinner tonight - still not feeling very well and there is so much to catch up on! I have frozen pot pies downstairs but my husband complains about the amount of saturated fat. Seriously, you should see what other things he eats! I'm glad your mom didn't have any trouble getting home!

    1. Thank you, Kathy! Why do men do that? They only try to be healthy when it goes against something you suggest. I hope that you start feeling better soon. I made something super simple for dinner tonight and will have that post next week.

Have a fantastic weekend! (((BIG HUGS)))

  4. Ohmigosh, Paula, it looks like restaurant art for the menu! Awesome job. It's nice to change things up when the household is varied... I cook different things when the dog is in day care than I do when she's home.
